Best Brownies

Hi everyone! I actually had this ready to post last week and just plain forgot. I'm still trying to figure out how to juggle being the mom of two and wife to one. I also had a bad cold last week on top of it all. I'm so glad you all stopped by for Tempt My Tummy Tuesday. It is great. I can't believe how many participants we have now. Last week I was craving chocoloate and actually had to make brownies from scratch! I know! Crazy thought! This recipe is great and we really enjoyed them. I hope you do too. It is from "Necessities and Temptations" one of my all time favorite cookbooks.


BEST BROWNIES
Ingredients


1 cup butter
1/2 cup cocoa
4 eggs
1 1/2 cups flour
dash of salt
1 tsp vanilla

Preheat oven to 350 degrees

Melt butter and dissolve cocoa in the butter and set aside
Beat in flour, salt and vanilla
Add cocoa and butter to flour mixture.
Bake in a greased and floured 9x13 metal pan for 30-40 minutes
30 minutes for chewy brownines or 40 minutes for cake-like brownies.

Waldo's Enchiladas

Well, Hello my blogger friends. Have you forgotten about me? I've been a little bit busy with a new baby. I knew I'd get back to the blog eventually and here I am, 6 weeks after delivery and ready to post for Tempt My Tummy Tuesday. Would you like to see our precious Gift from God? Here is big Sister Kathryn with little man Spencer. This was her first time to see him at the hospital. I love this picture.
We are all adjusting well, and yes, even getting some sleep at night. We are truly blessed. I had a moment yesterday when I just stopped and had to thank God for all the blessing and how he has completed our little family. I am so grateful.

As I was thinking about TMTT, I also thought about all the wonderful friends we have who have brought us meals during the past weeks. We have been blown away by the love of our church family. It is so wonderful to be a part of a loving church family. Honestly, we have not had one bad meal. They all rocked!!! So in honor of one of the meals we received, I'm posting the enchilada recipe our friends the Waldos' brought over. I'm told it is a family recipe, all I know is it was good and easy and I didn't have to make it! woo hoo! So here it is I've renamed it in their honor...

Waldo's Hatch Green Chili & Cheese Enchiladas
1 package flour tortillas
16 oz container of sour cream
10-15oz Hatch Green Chili Enchilada sauce
3-4 cups of Colby Jack Cheese
(you can add seasoned chicken if you wish to change it up)

Mix the sour cream and green chili sauce together, put a little on the bottom of your 13x9 dish. Take the four tortilla and cheese and roll up. Fill the pan . Pour the remaining sauce on top of the enchilads and cover the sauce with cheese. Bake at 350 for 40 minutes.
