Apple Chicken Salad

Hello Tempt My Tummy Tuesday people! Hope you are well! I am still getting the hang on my new addition and promise to begin some serious blogging soon. I have lots to discuss with the new little guy and we are in the middle determinining some treatment options for him as he has Plagiocephaly. It looks like he will be fitted for a DOC band. Please keep our little guy in your prayers. I am sure I will be documenting our adventure soon.

This week Lisa has a give away so I'm posting a salad recipe that would be appropriate! Enjoy.

Apple Chicken Salad

Ingredients
1/2 cup Girard's Apple Poppyseed Dressing
1/2 cup toasted pecans
2 cups shredded cooked chicken meat
1 large Granny Smith apple diced
1/2 cup chopped celery
1/2 cup chopped dates or your favorite dried fruit
2 cups chopped cabbage
4 cups mixed salad greens
1/4 cup peeles of aged white cheddar cheese
salt and pepper to taste

In a large bowl add all ingredients except cheese and gently toss. Top with cheese.

Balsamic Spinach Salad Supreme

Hello Tempt My Tummy friends! Don't forget to visit Lisa's blog for all the TMTT fun.
Today I'm all about the Salad. My daughter knows how much I love a good salad. She talks about how she wants to be a chef when she grows up and will have her own restaurant. She always tells me that she will have really yummy salads because those are Mommy's favorites. I love her!
The salad I want to tell you about is one that our dear friends brought to us when it was their turn to bring us food after the baby was born. It is a Salad kit she bought at Sam's It is called "Balsamic Cafe Salad Kit" I promise you I have looked all over the webby world for a picture or a link to this product but did not find one. Sorry... BUT the good news, you can make it yourself! The kit contains all the ingredients except the fresh baby spinach. Not a problem. Actually a good thing, because when I was at Sam's today... I bought 2 kits. We had one for dinner and the other I'll save for next week. If the spinach was in it, we'd have to eat it immediately. I'm telling you people, this is so stinkin' good that my husband even asks for it.... and salad is NOT his favorite food, especially as a main course for dinner! So here are the ingredients! You really do need to make this!!!
Balsamic Spinach Salad Supreme
(I'm calling it supreme because it is supremely yummy!)
(these are rough estimates on ingredient amounts, as everything in the kit is pre-measured)
1 bag Fresh Baby Spinach
1 Chicken breast cooked and diced
1 1/2 cup Red Seedless Grapes
1 cup Dried Cranberries
1/2 cup Roasted Pecan pieces
1/2 cup Blue Cheese crumbles
Balsamic Vinaigrette of your choice
Now, throw all of that is a huge bowl and toss it. Yep... I told you it was gonna be good!
