Pancake Night!


Welcome back. If you are new, this is the Tempt My Tummy Tuesday blog carnival. My twin sister, Lisa, and I co-host the fun. First of all, I KNOW I have been a delinquent blogger. I KNOW!!! There has been so much going on, I just had to take a break, yes, I should have told you first, but I was not able to just sit and find the words. I has been crazy to say the least. I do plan on posting all about it but for now I will just say, my life should be slowing down a bit. This is a promise I have given my husband, my sweet, husband, who has let me spend many hours in rehearsals for months preparing. My Hus
band who knows that my true love after God, him and my daughter is singing praises to my God.
I had the privilege to lead in Worship this past weekend for our annual Ladies' Retreat. It blessed my socks off! I will tell you more, but just know, my plan is to get back into my Blogger groove soon!


Now, on the the FOOD!

Pancake Night!
Because last night was the end of the CRAZY around here, we opted for a nice easy dinner of pancakes. Boy, I forgot how good it is to have Breakfast for Dinner! Can I hear an amen out there? Growing up, we did this a lot. My Dad's favorite meal was breakfast, but he wanted it for dinner because he was too busy to have it in the morning.

My daughter LOVES pancakes and asks for them all the time. I like to make them a special treat, which means in Mommy talk, " I'm too busy to make them very often." When I do make them, we go all out! Now, I DO NOT make mine from scratch, that is just silly! I usually have our grocery store brand "bisquick" and I go from there.

I use the recipe on the box which calls for:
mix, milk, eggs and a little bit of sugar.
I add:

vanilla
cinnamon
and this is the MUST have ingredient at our house....
red food coloring to make PINK pancakes.

I do not measure my "extras" it is by taste preference. BUT the vanilla adds a nice homey taste and flavor that I really recommend. We also add mashed up bananas from time to time.

Sometimes we add chocolate chips to ours! WEdnesdays are our breakfast for dinner nights and often have pancakes. :D

We add chocolate chips, strawberries, blueberries (of course), diced peaches, really anything sweet.

Sometimes we'll experiment with toppings too... honey, peanut butter, cinnamon suger. It's all good.

Pancakes are so much fun!

Ah yes, the good ol' pancake :) We eat so many dang pancakes around here! We're always tossing some fruit into ours - raspberries, blueberries, or bananas are the favorites.

MY personal favorite is my "cinnamon sugar" pancake. I make the regular pancake batter (we use a scratch recipe since Clara is allergic to nuts and it seems that every boxed mix has 'em). Before I put them on the griddle, I add a some butter, cinnamon, and sugar to the griddle. Then I drop the batter and cook. Before I flip them, I add more cinnamon and sugar to the top (so both sides are coated). Add some butter and syrup...tastes just like a cinnamon bun! I could eat about 20 of them. Totally not good for me, but sometimes a girl has to have her treat :)

You are so right! This is your Dad's favorite meal at dinner time.
I also know this is our gradchildren's favorite breakfast when they have a sleep over at MeMaw's and PaPaw's house.
I get great joy in preparing that breakfast for sure.

Oh I'm with you on putting vanilla in the pancakes... but cinnamon I hadn't thought of. Definitely next time. And there will be a next time since Little Miss threw a fit that I made foccaccia and other stuff for dinner tonight instead of pancakes. We also put in blueberries, chopped strawberries sometimes, chocolate chips, dried cherries.... Now I need to go get a snack because I'm hungry!

I adore breakfast foods any time of day! Yum yum! I don't make a lot of pancakes, but do make yummy blueberry whole grain waffles. They are good and good for you, which I like!
