English Pea Salad

Today I'm posting an English Pea Salad. I've been craving this today! I guess you can blame the pregnancy on it. I may be making this tomorrow for lunch!

English Pea Salad
1 can of English/sweet peas, drained
2 hard boiled eggs, peeled and chopped
2 -3 pieces of bacon ( I love to used the Oscar Meyer or Hormel real bacon pieces for this)
1 cup of cheddar cheese ( I like the cheese cubed but you can use shredded as well)
1/4 cup of chopped red onion ( you can use less if you like)
3-4 tsp Mayo ( again this is to taste, if you like it creamer... go for it. Fat free works great here)

Combine all your ingredients. Add salt and pepper to taste and refridgerate!

How easy is that... come to think of it... I think I'll just add this to our dinner menu tonight!

I LOVE pea salad. I do usually use frozen peas but other than that, your ingredients are pretty similar. I also sometimes add chopped cauliflower...adds lots of crunch!!

Now I am craving pea salad, lol.
