Broccoli Salad and dressing

I have been so bad about posting regularly these past few months. This pregnancy has really been tough and I am finally coming to the end of it. I need to make it two more weeks but I just don't know. When I get up and move around... the contractions begin. So, I am sitting/reclining and reading A LOT (thanks to my Kindle) and I'm catching up on all the TV shows I haven't seen in ages thanks to Hulu. But honestly, all I really want to do is have this boy already!

With my diagnosis of Gestational Diabetes, I have had many, many, many salads the past few months. One of my favorites is a Broccoli Salad. I originally based this on a Paul Deen recipe I had, but I change it up depending on the ingredients I have. I also make my own dressing that is diabetic friendly. It is supper yummy and actually tastes the best a day after you make it.

Broccoli Salad and dressing

ingredients:
1 head of broccoli. cut individual heads off
1 cup of small grape tomatoes - cut in half
1 1/2 cups cubes colby cheese
1/2 small red onion chopped
1/4 cup real bacon pieces chopped

optional additions:
raisins
craisins
broccoli slaw

Dressing
1/4 cup mayo
2-3 Tbsp Dijon mustard
2 Tbsp Red Wine vinegar
1-3 packets of splenda or sugar substitute of your choice

*mix the ingredients of the dressing together. All is to taste. You may want it sweeter... you may like it with more vinegar, honestly, PLAY with it. I also LOVE this on a green salad. It is my go to dressing.

Pour dressing over all the salad ingredients and let it sit overnight in the fridge. Enjoy!!!
