I've taken a few weeks off as I'm 8 months pregnant and having all sorts of problems, so I'm not so good at the blog right now.
As I'm suffering with Gestational Diabetes right now and taking insulin. I'm doing my very best to eat a very healthy diet. Which is a bit embarrassing, because, honestly, I'm just eating a healthy diet... like we ALL should be doing.
One of the veggies I've been cooking lately is sauteed spinach. I've always eaten spinach from a can, but have you ever taken a huge bunch of fresh spinach and sauteed it with garlic and onions? Well, let me tell you... YUMMY! My husband loves it! So by all means, forget the can and go fresh!!!
Fresh Sauteed Spinach
What you need:
- Take a LARGE bunch of fresh spinach (it really reduces in size, so the more the better)
- 2 - 3 cloves of garlic minced
- 1 small yellow/white onion sliced
- 1 small container of mushrooms sliced
- 3 Tbsp olive oil
Put olive oil, garlic, onion in a large skillet or WOK like saute pan and cook on medium heat. When onion is beginning to become translucent add the mushrooms and spinach. You will need to continue to stir this as the spinach wilts. This does not take long! Enjoy!!!!

Sauteed spinach is one of our faves, but I have never added the extra veggies-it sounds delish!
