I'm dying here... I need some cool relief!

Y'all I am HOT!!! No, not that kind of hot... HOT like Hell HOT!!! Who can stand it? It has been 101 -104 degrees here.  So YES, I am once again posting something cool and refreshing because it is all I think about. Snow, snow-cones, ice, ice cream, cold lemonade, iced tea, iced coffee... do you get the picture?
So, today it is Ice Cream. I've taken this recipe straight from the Eagle Brand Milk website.


It is Mint Chocolate Chip Ice... one of my favorites!!!


Ingredients

1 (14-ounce) can EAGLE BRAND� Sweetened Condensed Milk (NOT evaporated milk)
2 teaspoons peppermint extract

Green food coloring (optional)

2 cups (1 pint) half-and-half

2 cups (1 pint) whipping cream, unwhipped
3/4 cup mini chocolate chips

Instructions
In large bowl, combine EAGLE BRAND�, peppermint extract and food coloring (optional); mix well. Stir in remaining ingredients.
Pour into ice cream freezer container. Freeze according to manufacturer�s instructions. Freeze leftovers.

The BIG ANNIVERSARY GIVEAWAY

Happy Anniversary to Tempt My Tummy Tuesday. When Lisa and I came up with the idea, one year ago to host TMTT, we never expected it to be what it has become. We now average over 70 participants, each week! We have discovered some wonderful recipes and made some great blog friends through TMTT. Lisa and I want to thank you all for your faithfulness to participate, sharing your recipes tips and ideas.

As a THANK YOU we are hosting a cookbook giveaway TODAY!!The winner of the giveaway will receive our FAVORITE cookbook. Both Lisa and I were given this cookbook as wedding gifts. I know that we have used many recipes from our books, through the years. Having been born and raised in Austin, Texas, we are proud the cookbook was created by the Austin Junior League. The giveaway will end at Midnight Tuesday night, July 7th. Lisa will use Random.Org to generate the winner. Lisa will announce the winner on Wednesday afternoon. NOW... today's recipe
Chicken Divan
It has been awhile since I made this, but I have a real craving for it, so I'm sure it will be made soon. It is super yummy! This comes from one of my favorites, Paula Deen
from her Food Network recipe list. I hope you enjoy it! My husband even likes it and he is not a fan of curry... so don't let that ingredient throw you off.
Ingredients
2 (10-ounce) packages frozen broccoli, chopped
6 cups shredded chicken, cooked
2 (10 3/4-ounce) cans condensed cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
1 cup grated sharp Cheddar
1 tablespoon fresh
lemon juice
1 teaspoon curry powder
Salt and pepper
1/2 cup dry white wine
1/2 cup freshly grated Parmesan
1/2 cup soft
bread crumbs
2 tablespoons butter, melted
Directions
Preheat oven to 350 degrees F.
Remove the outer wrappers from the boxes of broccoli. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a casserole dish. Add the shredded chicken.
In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.
Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan, bread crumbs and butter and sprinkle over the top.
Bake for about 30 to 45 minutes.

It is nice and cold here and I'm thinking of warm drinks to enjoy. This is always a holiday favorite. I hope you enjoy. It makes a great gift as well!

Spiced Tea Mix

1 (3 ounce) package lemon-flavored ice tea mix
2 (1.8 ounce) packages orange-flavored drink mix (e.g. Tang)
1 1/3 tablespoons ground cinnamon
2 teaspoons ground cloves

Combine iced tea mix, orange flavored drink mix, ground cinnamon, and ground cloves. Store in an airtight container. To serve, stir 1 1/2 teaspoon mix into 1 cup hot water

A GIVEAWAY? Ahhh You Bethcha!







This is SO exciting!

Lisa and I have had so much fun meeting all our new Tempt My Tummy Friends that we think it is only fitting that we say a big Texas Thank you with a Giveaway!

Quick and Easy Beef Stew



I made this Beef Stew on Saturday and it was so good. The package says you can be done in 20 minutes... I just didn't believe that and I wanted it to really have that cooked all day taste. So I let this cook for 2 hours. It was fantastic. I hope you enjoy.

2 pounds boneless sirloin steak, cut into 1-inch cubes
3 tablespoons flour
1 tablespoon vegetable oil
1 package McCormick® Beef Stew Seasoning
3 cups water
1 bag (24 ounces) frozen vegetables for stew OR 5 cups cut up vegetables (used potatoes, onions, carrots)

1. Coat beef with flour. Heat oil in large skillet or Dutch oven over medium-high heat. Add sirloin cubes and sauté until browned. Drain.

2. Add seasoning, water and let simmer for 50 minutes. I then added veggies and let it simmer for another hour.



I made some cornbread and it was great!
