A little Comfort with my food Please...

Today I am writing about something amazing I saw last week. I could not believe my eyes. Could it be that simple I thought? Could it be that easy to have homemade doughnuts in my own home? Surely not!

BUT Paula Deen made it so. She made Doughnuts using... are you ready for this (you MUST do a drum roll in your head please)... store bought biscuits!

Yep, you read that right, biscuits. I was sitting there with my jaw dropped open like an idiot.
I got so excited. I plan to try this on Saturday for my little family as a treat.

Paula Deen's Chocolate-Dippy Doughnuts

Ingredients:

Peanut Oil
1 Can store -bought biscuits
1 (4oz) bar sweet chocolate ( Baker's German recommended)
1/2 oz (1/2 square) unsweetened chocolate
1 stick unsalted butter
1 1/2 teaspoon vanilla extract

Directions:
Preheat fryer with peanut oil to 350 degrees
Separate pre-cut biscuits. Make a hole in the middle with your hand and sculpt dough into a doughnut shape. Place doughnuts into fryer and cook for 4 to 5 minutes, flipping to fry both sides. Place doughnuts aside onto a paper towel lined plate to remove excess oil.

Melt the chocolate and butter in a saucepan over very low heat. Stir in the sugar, alternating with the evaporated milk, blending well. Raise the heat to medium and bring to a boil, stirring occasionally. Lower the heat and cook, stirring, until the mixture becomes thick and creamy, about 8 minutes. Stir in the vanilla then remove the pan from the heat.

Stick a fork through the doughnut holes and dip the doughnuts immediately into the chocolate mixture before the chocolate starts to cool. Place the doughnuts on a plate and serve when the chocolate on the doughnuts sets, about 5 minutes.


Seriously... this is NOT a weight watcher kind of post... it is all comfort here!

Baked Bean Soup

This is a recipe I began cooking last winter. We LOVE this. It is so easy and SO good. If you are a fan of good old fashion baked beans, you will adore this.
It comes from my favorite lady...Paula Deen. It is in her cookbook, "The Lady & Sons Savannah Country Cookbook"

Confederate Bean Soup
serves 3 or 4


1/2 lb. Hillshire Farms smoked sausage, sliced in round 1/4 inch thick
2 slices bacon, diced
1 clove garlic, minced
1 medium onion, diced
1 tbs. butter
2 cups leftover baked beans OR 16ox can of Bush's baked beans
1 1/2 cups half-and-half

Saute' sausage, bacon, garlic, onion and pepper in butter until bacon is cooked. Add beans and simmer for a few minutes over medium to low heat. Add half-and-half. Increase or decrease half-and-half for preferred thickness.

Enjoy... it is fantastic on a cold evening with some crusty bread.

Lime Blueberry Tiramisu


Welcome back. If you are new, this is the Tempt My Tummy Tuesday blog carnival. My twin sister, Lisa, and I co-host the fun. Well, it is NO secret that I think Paula Deen hung the moon and stars. I just love her down home cooking. It is so much like me. This past week I caught an episode on the Food Network that was fabulous with some really great recipes. I'm going to focus on one though, it is Lime Blueberry Tiramisu. Oh my heavens, it looked so good. I can not wait to make this. I have the ingredients on my next grocery list. I thought you nice ladies would enjoy trying it too.


Ingredients

  • 1 pint heavy whipping cream
  • 1/4 cup confectioners' sugar
  • 1 pound mascarpone cheese, at room temperature
  • 3 (3-ounce) packages unfilled ladyfingers
  • 1 (6-ounce) can frozen limeade concentrate, thawed
  • 1 (21-ounce) can blueberry pie filling
  • Fresh mint leaves, optional

Directions

In a large bowl, beat cream with an electric mixer at medium speed until thickened. Gradually add confectioners' sugar, beating until soft peaks form. Gently stir in cheese until combined; set aside.

Split ladyfingers in half. Line a 13 by 9 by 2-inch baking dish with ladyfingers, cut side up. Brush ladyfingers with limeade concentrate. Spoon half of cheese mixture over ladyfingers. Top with half of blueberry pie filling. Repeat procedure for the next layer with remaining ladyfingers, limeade, cheese mixture, and pie filling. Cover and chill 8 hours. Cut into squares to serve. Garnish with fresh mint, if desired.
