Tempt My Tummy Tuesday

Welcome, once again, to Tempt My Tummy Tuesday. My sister and I are so glad you came by. If you are joining us for the first time, here is the scoop. My twin Lisa, and I want to have some fun with our blogging community. We hope you will share recipes, kitchen tips, restaurant reviews, or anything else food related. We aren't gourmet cooks. We are two Texas girls who like to cook and LOVE to eat.

Now I have to tell you... we really are twins, because without even talking to eachother about it, today we both picked Texas salads! TOO FUNNY!

Today I am inspired by a post I read the other day asking people to discuss the stereotypes from the states they live. Well, here in Texas, there are so many to choose from. What can I say, we think we are pretty special and we are sad for those of you who are not here. We have everything from red necks, cowboys, hippies, socialites, tree huggers and everything else under the sun.

We are also proud of our food. It's is not like there isn't great food in other states, again, we think we invented good food. Beef bbq, Tex-Mex, Whole food vegan organic stuff... you name it, we think we invented it.

So today I'm giving you Texas Caviar. You heard me... caviar... just the way we like it. We use tortilla chips or a big Frito scoop, it is some of the best stuff you can serve at a party. You are gonna love this stuff. It serves plenty for your next Sunday school party, bunko group, or super bowl party. I love it and I think you will too.

Now, I tried hard to find you a picture, I do not have one, I'm so sorry, but please know you will want to make this even if you do not have a beautifully Texan photo to entice you.

Texas Caviar

1/2 onion, chopped
1 green bell pepper, chopped
1 bunch green onions, chopped
2 jalapeno peppers, chopped
1 tablespoon minced garlic
1 pint cherry tomatoes, quartered
1 (8 ounce) bottle zesty Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
1/2 teaspoon ground coriander
1 bunch chopped fresh cilantro


DIRECTIONS
In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve. It tastes even better if you can wait one day... just one day, I promise it will be worth it!

This is the best stuff. We were at a party on Saturday night and someone made this. I ate it UP!

I am a TX girl too so was thrilled to find your blog. The Lord has us in FL right now, but we are praying that He moves us back soon. Thanks for blessing my heart with a "taste" of the Lone Star State!
